Pizza Fra Diavolo
I’ve been craving pizza all week, so last night I decided to satisfy that craving by making a couple pies. Sam is still on a no-cheese kick, so I knew that one pie would have to be dairy-free. I topped that with clams, shrimp and sliced garlic and made the marinara spicy, like a fra diavolo pasta dish. Garnish with fresh basil and eat while it’s hot!
I started with my standard dough, made from a mixture of white and wheat flours. Then I made the tomato sauce and prepared the toppings. I put it all together and slid it onto a pizza stone in oven, heated to 500 degrees. 8 minutes later– homemade pizza!
Tomato Sauce for Pizza (makes enough for 2 pies)
- Olive oil
- 4 cloves of garlic, smashed and finely minced
- 26 ounces chopped tomatoes (I use the Pomi boxes)
- 1/2 cup red wine
- 1 bay leaf/ laurel
- 1 tablespoon dried oregano
- 2 tablespoons tomato paste
- 1/2 cup fresh basil, finely chopped
- 3 anchovies, packed in oil
- Herbs to taste (I used some thyme from my windowsill garden)
- Salt to taste (you may not need any because of the anchovies)
In a large saucepan, pour a few tablespoons of olive oil and place on medium-low heat. Add garlic and let cook for a minute until it changes color slightly (but is not yet brown). Add tomatoes, wine, bay leaf and dried oregano and raise heat. When the mixture is bubbling stir in tomato paste and, add basil, additional herbs and anchovies (no need to chop them up, they will melt into the sauce). Let simmer. Add salt to taste.
For the Pizza Fra Diavolo, I reserved half of the sauce I made and used it for the topping.
Fra Diavolo Pizza Topping
- Olive oil to coat pan
- 3-4 dried chiles, chopped and crushed
- Tomato Sauce for Pizza (recipe above– use half)
- 6-8 ounces shucked clams
- 1-2 garlic cloves, finely sliced
- 10-12 large shrimp, deveined and deshelled
- 3 tablespoons olive oil
- Juice of one lemon
- 1 teaspoon liquid smoke
- Salt and Pepper
- Fresh chopped basil
Lightly coat a medium saucepan with olive oil and put on medium heat. Add chiles and cook for 1-2 minutes. Add tomato sauce, clams and sliced garlic and let simmer.
Put the broiler on. In a medium sized bowl, combine olive oil, lemon juice, liquid smoke, salt and pepper. Toss with shrimp. Place in the broiler on a grill rack for 3 minutes and remove from oven.
Assembly and Baking of Pizza Fra Diavolo
Place a baking stone on the center rack of the oven and preheat to 500, or its highest temperature. Sprinkle cornmeal on the counter top and roll out the dough into a large disc. Top with sauce and shrimp. Sprinkle additional cornmeal onto the baking stone, and slide the uncooked pizza onto the baking stone. Bake for 7-9 minutes, or until crust is browned and toppings are bubbling. Garnish with fresh chopped basil and let cool for 3-5 minutes before cutting. Mangia and enjoy!
