Homemade Nutter Butters

Nutter Butters were one of my favorite store-bought cookies growing up. I haven’t had one in at least 5 years, but I thought I could create a better, homemade version with peanut butter cookies sandwiching a peanut utter-cream cheese filling. They didn’t disappoint!

Peanut Butter Filling

  • 4oz of cream cheese (1/2 package) (still cold)
  • 3/4 cup of peanut butter
  • 2 tbsp butter, softened
  • 2-3 cups of confectioners sugar, sifted
  • Tablespoon of vanilla
  • Milk to thin if necessary

Beat together peanut butter, cream cheese, and butter. Slowly add the confectioners sugar until it reaches the desired consistency (spreadable). Add the vanilla. Add milk one tablespoon at a time (or additional rum) to thin, as necessary. Place in the refrigerator until ready to use.

Peanut Butter Cookies

INGREDIENTS

  • 1 1/4 cups all purpose flour, (sifted or whisked before measuring)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 teaspoons vanilla
  • 1 egg

Preheat the oven to 350. Mix the flour, salt and baking powder together and set aside. In a large bowl (or the bowl of your stand mixer), mix together the peanut butter and sugars. Beat in the egg and vanilla. Stir in the flour mixture. (If it’s a little dry, then you can add a couple tablespoons of milk, but it should be fairly stiff.) Evenly space large spoonfuls of dough on cookie sheet. With a fork, gently press down on each cookie to flatten. Cross the tines of the fork the other way and press down again to create a criss-cross pattern. Repeat with each ball of dough. Bake for 10-12 minutes. Let cool. Then, divide the cookies into pairs. Spread the peanut butter filling on one cookie, and place the other on top to create a sandwich. Repeat with the remaining cookies and filling. Enjoy with a glass of milk!
